How UL 300 Kitchen Fire Suppression Systems Work

Modern commercial kitchen fire suppression systems are tested and listed under UL 300, a testing standard developed by Underwriters Laboratories that replaced the older UL 300A standard in 1994. UL 300 systems use a wet chemical agent, typically a potassium-based solution, that is far more effective against the high-temperature cooking oils used in commercial kitchens today.

When a fire occurs on the cooking line, the system activates through one of two methods. Automatic activation happens when heat from the fire melts a fusible link mounted in the hood above the cooking equipment.
